Chocolate Zucchini Loaf Recipe

If you've been looking for a healthier version of some of your favorite treats, look no further! We've take the traditional Zucchini Loaf and tweaked it to be more nutrient dense and to be more blood sugar friendly!
 
Ingredients:
⁃ 1 zucchini
⁃ 2 eggs
⁃ 2 tbsp butter
⁃ 2 tbsp water
⁃ 1 cup Simple Mills Muffin & Bread Baking Mix
⁃ 2 scoops protein powder
⁃ 1 Resist bar


Directions:
⁃ Heat oven to 350 F.
⁃ Grate 1 zucchini and then transfer to a strainer to remove water. You may need to squeeze the zucchini a bit. You’ll have about 1/3 cup grated zucchini by the end.
⁃ Mix together eggs, butter, zucchini, and water.
⁃ Mix in baking mix and protein powder.
⁃ Chop up Resist bar and add in to the batter.
⁃ Grease a baking pan and pour in batter. Cook for 10-15 minutes.
⁃ Let cool and enjoy!!
