High Protein Chocolate Zucchini Loaf

So you're craving something sweet that's low in carbs and sugar, high in protein and tastes AMAZING! Don't worry... we've got your back!
Ingredients:
⁃ 1 zucchini
⁃ 2 eggs
⁃ 2 tbsp butter
⁃ 2 tbsp water
⁃ 1 cup Simple Mills Muffin & Bread Baking Mix
⁃ 2 scoops protein powder
⁃ 1 Resist bar
Directions:
⁃ Heat oven to 350 F.
⁃ Grate 1 zucchini and then transfer to a strainer to remove water. You may need to squeeze the zucchini a bit. You’ll have about 1/3 cup grated zucchini by the end.
⁃ Mix together eggs, butter, zucchini, and water.
⁃ Mix in baking mix and protein powder.
⁃ Chop up Resist bar and add in to the batter.
⁃ Grease a baking pan and pour in batter. Cook for 10-15 minutes.
⁃ Let cool and enjoy!!!
